【摘要】:Theprincipalpurposeofirradiationistoreducethenumberofpathogenicbacteria,suchasCampylobacter,Escherichiacoli0157:H7,Listeriamonocytogenes,StaphylococcusaureusorSalmonellaspp.,inprocessedmeatsandpoultrytomakethesefoodssaferforhumanconsumption.Note38212;Ionizingradiationdosesbelow10kGywillreducebutnoteliminatesporesofpathogenicbacteriaincludingthoseofClostridiumbotulinum,ClostridiumperfringensandBacilluscereus.Irradiationtreatmentcanextendtheshelflifeofprocessedmeatsandpoultrybyreducingthenumbersofvegetativespoilagebacteria,suchasPseudomonasspeciesandlacticacidbacilli.IrradiationtreatmentalsoinactivatesparasitessuchasTrichinellaspiralisandToxoplasmagondii.Radiationprocessingofthefinalproductinitspackagingisacriticalcontrolpoint(CCP)ofaHazardAnalysisofCriticalControlPoints(HACCP)conceptfortheproductionofProcessedMeatandPoultry.Itservesasanimportantmeasuretocontrolanyresidualriskfrompathogenmicroorganismsjustbeforetheproductreachestheconsumer.4.5Thex201C;RecommendedInternationalCodeofPracticeforRadiation-processingofFoodx201D;(CAC/RCP19-1979)oftheCodexAlimentariusidentifiestheessentialpracticestobeimplementedtoachieveeffectiveradiationprocessingoffood,ingeneral,inamannerthatmaintainsqualityandyieldsfoodproductsthataresafeandsuitableforconsumption.1.1Thisguideoutlinesproceduresfortheirradiationofpre-packagedrefrigeratedandfrozenprocessedmeatandpoultryproducts.Note18212;TheCodexAlimentariusCommissiondefines"meat"(includingpoultryandgame)as"theediblepartofanymammalslaughteredinanabattoir,"and"poultrymeat"as"theediblepartofslaughtereddomesticatedbirds,includingchicken,turkeys,ducks,geese,guinea-fowls,orpigeons."(CAC/RCP13-1976)Note28212;CurrentU.S.regulationslimitthedefinitionoflivestockspeciestocattle,sheep,swine,goat,horse,mule,orotherequineandpoultryspeciestochicken,turkey,duck,goose,andguinea(2,3).1.2ThisguideaddressesallrefrigeratedandfrozenmeatandpoultryproductsNOTcoveredbyGuideF1356.1.3Thisguideprovidesinformationregardingabsorbeddosesusedforinactivationofparasitesandreductionofbacterialload.Suchdosesaretypicallylessthan10kilogray(kGy).
